This is a new feature on our website. “In the Camera’s Eye” will be fast and furious snippets of things that have grabbed my attention… for whatever reason. I will be attempting to capture the essence of what I am sharing in no more than two paragraphs and in 10 or less photos with captions.
I thought this first offering was just going to be about take-out chicken in Spain. However, the place I chose to buy chicken from turned the experience into so much more than just rotisserie chicken. La Rosticceria offers a wide range of incredible gourmet takeout food as well. So, not a true “asador de pollos” in the literal sense, but both their chicken and potatoes were fabulous! La Rosticceria, check it out the next time you are in Marbella.
BUT, you should know something about Spain’s much enjoyed food joints
selling “asador de pollos” (rotisserie chicken). They are typically hole-in the-wall, strictly takeout places. The menu will usually only include chicken and roasted potatoes or fries. Most close for the day… including La Rosticceria… between 4:00 and 5:00 PM at the end of lunch hour.

Supper! La Rosticceria does their chicken a little bit differently than everybody else. They “sous vide” cook it before they put it on the rotisserie… the net result… it is incredibly tender and tasty.
Mouth-watering good. The chicken, cut in half, accompanied by a container full of delicious roasted potatoes. I made a reduction from the liquid.
For €12 we had two full dinners and enough leftover chicken to make chicken salad sandwiches on the third day. Amazing!

When we popped in to take a few more pictures Javier gave us a taste of a beef dish they were preparing. I wanted to take a photo of it with their paella because I could tell the paella was done in the proper Spanish method; with lots of “socarrat”, the crusty, caramelized and toasted bottom.
I really should mention the “asador de pollos” that I started out to speak about. This is the one in Fuengirola that we frequented. As you can see, literally “hole in the wall”.
And this is the one just down the street from us. Much more elaborate than most. It even has a couple tables outside. Very glad we passed it over and went to La Rosticceria. 🙂

We are going to be enjoying some of La Rosticceria’s rabbit on Sunday. I’m sure it will have gone through the sous vide process as well. I am all about rabbit these days having finally gotten a handle on cooking the “Lapin à la moutarde à l’ancienne” dish while in Spain.
